The City-on-the-Dyle’s best-kept secret is hidden in the sixteenth-century vaulted cellars of Taste M, where Master of Cheese Schockaert ensures that each cheese served is ripened to perfection, while Cellar Master Fabien pours the perfect wine to accompany it. Schockaert is four generations of knowledge of cheeses and more than a hundred years’ experience of making them. Fabien is a celebrated vintner who stocks over 250 wines and an impressive selection of spirits and bubbles. His own Champagne Artéis & Co is served everywhere from Mechelen and Antwerp to New York and Hong Kong, but tastes best here at home.
